Summary: The Kitchen Manager is responsible for overseeing all back-of-house operations, ensuring efficient kitchen performance, food quality, cost control, and compliance with health and safety standards. This role leads culinary teams, manages inventory and ordering systems, and partners closely with front-of-house leadership to deliver a seamless guest experience.

Responsibilities:

  • Oversee daily kitchen operations, ensuring consistency in food quality, presentation, and execution.
  • Maintain adherence to recipes, portioning, and plating standards.
  • Ensure all food is prepared and stored in compliance with health department regulations.
  • Lead line checks, prep standards, and service execution during all shifts.
  • Monitor kitchen cleanliness, organization, and equipment maintenance.
  • Recruit, train, and develop kitchen staff, including line cooks, prep cooks, and dishwashers.
  • Create and manage schedules based on business needs and labor targets.
  • Provide ongoing coaching, performance feedback, and corrective action when necessary.
  • Foster a positive, respectful, and accountable workplace culture.
  • Manage all purchasing, ordering, and inventory control processes.
  • Ensure timely and accurate ordering of food and supplies to meet operational needs.
  • Oversee receiving procedures, including verifying product quality, quantities, and invoice accuracy.
  • Maintain proper storage practices (FIFO) and minimize waste and spoilage.
  • Conduct regular inventory counts and reconcile variances.
  • Monitor and manage food cost, labor cost, and overall kitchen expenses.
  • Implement strategies to reduce waste and improve profitability.
  • Ensure accurate invoice processing and cost tracking.
  • Utilize Craftable for daily back-of-house financial and operational management.
  • Manage purchasing, vendor relationships, and order placement within Craftable.
  • Oversee receiving and invoice reconciliation through the system, ensuring accuracy and timely processing.
  • Maintain up-to-date product catalogs, pricing, and vendor information.
  • Map and maintain all recipes within Foodager, ensuring accurate ingredient linking and yields.
  • Perform recipe costing and maintain real-time cost updates based on vendor pricing.
  • Analyze food cost variances and adjust recipes or purchasing strategies accordingly.
  • Manage inventory tracking and theoretical vs. actual usage reporting.
  • Process and code invoices, ensuring alignment with budgets and proper GL allocation.
  • Generate and review reporting (COGS, usage, waste, and variance reports) to inform operational decisions.
  • Partner with culinary leadership to optimize menu profitability through data-driven insights.
  • Ensure full compliance with local health department regulations and food safety standards.
  • Maintain proper food handling certifications and ensure team compliance.
  • Enforce safety protocols, including equipment use and hazard prevention.

 

Must Haves:

  • 3–5+ years of kitchen management or culinary leadership experience.
  • Strong understanding of kitchen operations, inventory control, and food cost management.
  • Experience with hospitality systems, preferably Craftable and Foodager.
  • Proven leadership skills with the ability to manage and develop teams.
  • Strong organizational, problem-solving, and communication skills.Physical stamina and the ability to lift heavy objects.
  • Ability to work flexible hours, including evenings, weekends, and holidays.
